So I made this recipe last night and I was totally unsure on how it would turn out. I am by no means a master chef so I was pretty impressed with my culinary skills last night. My husband said this was the best meal I have ever made so I figured I would share the reciepe.
Here's how I made it... My recipe writing skills might be a little rough so bare with me :)
Ingredients:
1lb of ground pork [1/2lb ground pork and 1/2 pound chorizo would be really good too]
1red bell pepper chopped
6 large poblano peppers
1/2 cup medium pico di gallo [I picked some up in the veggie section at the grocery store]
2tbs chopped garlic
4tbs low fat cream cheese
1 bag of Kraft Mexican Quesadilla cheese [or your cheese of preference]
1/3 cup Mexican Hot Sauce [I used the brand Valentina but any brand would work]
1/2 cup hominy [they seem to only sell this in big cans so I used what I needed and then froze the rest in a baggy for the next time I make this]
I cup Salsa of choice
Directions:
•Preheat your oven to 425 degrees
•Wrap the poblano peppers in foil with a few tablespoons of water to steam them.
•Once your oven is preheated, put the foil wrapped poblano peppers in the oven for 30-45 min or until they are soft and the skin is lifting.
•turn your oven down to 350 degrees
•set the peppers aside and let cool: once the peppers are cool enough to touch, peel off as much of the skin as possible, remove the veins and the seeds. [I did this after I sautéed the veggies and browned the meat]
•sautée the garlic, bell pepper and pico de gallo in a big pan
•add the hominy once the bell pepper and onion from the pico has started to soften and sautée for another couple minutes.
•drizzle some of the hot sauce on top of the veggies and store it all together [I used about 1/3 cup but you can add more if you like it spicier]
•once you have finished this, place the sautéed veggies aside in a bowl and brown the pork. Use another 1/3 cup or so of hot sauce to give the meat a good flavor
•put the cooked pork and the veggies back into the pan and add the cream cheese
•stir until the cream cheese is melted and evenly dispersed into the pork and veggies
•place the pork mixture into one poblano pepper and then sprinkle with desired amount of cheese. Repeat for the rest of the peppers.
•add salsa on top of the peppers and bake for about 20 min

[I had extra meat so I stuffed bell peppers with the pork and that was really good too.]
